In this post I will show and guide you on how to make an amazing and super tasty Piada — or Piadina, or “flat bread” in English.
Now to make an amazing Piada you are going to need:
Ingredients:
- 4 Cups of Flour (1Kg)
- 1 ½ Cups of Lard (200g)
- 1 ½ Cups of Sparkling water (200g)
- 1 ½ Cups of Milk (200g)
- 2 ½ tsp of Yeast (4g)
- 4 Tbsp of Salt (30g)
- 1 Tbsp of Honey
- 1 Tbsp of Olive Oil
- Pinch of Baking Soda
How to Make Piada (Flat Bread):
1. First, melt the salt in half of the water and the yeast in the other half, and melt the honey in the milk.
2. Put the flour on the wooden board, take the lard and make little chunks and spread them in the flour.
3. At this point create a nest digging your hand in the middle of the flour and make circles to create a hole in the middle. Add the milk, the water and the olive oil, and start to mix.
4. You can use your fingertips and start to incorporate the flower little by little.
5. Work the dough with the palm of your hand pressuring down and forward, then when you reach a cylinder shape fold it and start again. Do it until you get a nice and smooth texture.
6. Cover it to sit with a kitchen towel or a plastic film. Let it sit for 15-20 minutes.
7. Now work the dough to create a thick cylinder and cut portions of 1 1/2 Cup.
8. Meanwhile use a large round flat pan, put it on the stove and heat it with a medium flame.
9. Shape the portions with your hands creating round medallions, use both hands and rotate the dough in a circle.
10. Once you have it put the medallion on the board and stretch it with the rolling pin. You want to reach a 5”-7” diameter.
11. Grease the pan with some lard, or butter (organic). Put your raw Piada on the pan and cook it.
Start with 2’ per side and then flip it until you can see clear light brown dots on both sides. Enjoy the aroma, guys!

- Shape the portions with your hands creating round medallions, use both hands and rotate the dough in a circle.
- Once you have it put the medallion on the board and stretch it with the rolling pin. You want to reach a 5''/7'' diameter.
- Grease the pan with some lard, or butter (organic). Put you raw Piadina on the pan and cook it.
- Start with 2’ per side and then flip it until you can see clear light brown dots on both sides.
- Just a few tips on what to put inside.
- Piada is really good with fresh cut Prosciutto di Parma or San Daniele (more sweet), arugula and fontina cheese. (You can find this kind of Prosciuttos fresh cut at Whole Foods or Bristol Farms)
- Another good filling is Speck (smoked Prosciutto form the north of Italy), Taleggio cheese (a northern Italian cheese, you can find it at Whole Foods) and grilled Radicchio.
- Porchetta, with grilled vegetables (bell peppers, eggplants, zucchini, onions)
- Italian sausage with grilled vegetables (bell peppers, eggplants, zucchini, onions)
- You can create your best mix of fillings that you like. Enjoy.
