It’s time to get your hands dirty!
Today I’ll show you how I personally make the simple pasta dough — fresh egg pasta dough. I would recommend that you have a pretty large wooden pastry board that helps to absorb the humidity from the dough.
Tools You’ll Need:
- A long rolling pin (if you can find it locally), otherwise the one that you have is OK.
- A pasta cutter (in my region is called “spronella” or “sprunela”) or a small knife.
First of all the basic rule to make fresh egg pasta is that we are using one egg per 1/2 a cup (100g) of flour.
So let’s say that you want to invite friends for lunch or dinner and you want to impress them with your own handmade fresh pasta, and lets say that you are 6 people total, you are going to need:
Ingredients:
- 3 cups of organic white flower (600g)
- 6 eggs, medium size, organic, pasture raised
How to Make Pasta Dough:
- Put the flour on the center of the pastry board and make a hole with your hand. You want to dig your hand in the middle of the flour and make circles with your hand. You want to obtain a circular wall of flour, but leave some at the bottom.
- At this point, open the eggs and add them in the middle of the “fountain.”
- Take a fork and with the prongs start to incorporate the flour. At first incorporate the bottom flour and then go to the walls.
When the mixture start to be dense is the time to get your hands “dirty.”
4. Roll the pasta dough with the palm of your hands, one hand at a time, pressing down and rolling forward until you shape a long cylinder, then fold it and repeat, until you get to a good consistency.

- 3 cups of organic white flower (600g)

- Bring a fork and with the prongs start to incorporate the flour. At first incorporate the bottom flour and the go to the walls. You want to incorporate the walls from the bottom up.
- Roll the pasta dough with the palm of your hands, one hand at a time, pressing down and rolling forward until you shape a long cylinder, then fold it and repeat, until you get to a good consistency.
- Add some flour if it’s still too sticky and work it a little more.
- Cover it to rest for at least a half an hour and then you are good to go and make some magic.
