    How to Make Passata di Pomodoro (Tomato Puree)

    This is a base, a must know how to make it, because from here you can play with your fantasy and flavor it as you wish, and create great and tasty sauces.

    Also instead to buy canned sauces, that you don’t really know the provenance and the making process, you could go at your local farmer’s market and buy organic tomatoes from there and support local sellers.

    Ingredients:

    • 4 lb of Tomatoes (san marzano if possible)

    How to Make Tomato Puree:

    1. First of all, after carefully washed, we have to cut the tomatoes in half.

    2. Using a spoon we need to scoop out the seeds.
    3. Put the tomatoes in a big enough pot and cook them with a low flame until they are completely limped.
    4. Mix once in while.

    5. Use a masher or a strainer to divide the skin to the sauce.
    6. Now you can use it and/or put in a jar for future usage.

    Notes
    1. If the puree is too runny, after strained, put it in a smaller pot and reduce it, until it reaches the consistency that you want.
