How to Make an Amazing Dolce Salame (Sweet Chocolate Salami)

OK it may sound gross if you think about a salami eaten with chocolate right? Maybe some of you would be brave enough to try it like that, BUT what I’m talking about is a delicious salami just made out of dry cookies and chocolate! So don’t worry about it it’s going to be amazing.

This kind of sweet is popular all over Italy, my Grandma would make it whenever we used to have a big lunch with the relatives, it’s really easy and really good and it serves many people. You can find some variations with nuts inside, covering it with powdered sugar. You could stupefy your guests offering a salami after dinner and let them taste this delicious treat.

Ingredients:

  • 1 1/2 Cups Dry Cookies or Crackers roughly chopped (300g)
  • 1 1/2 Cups Sugar (300g)
  • 1 Cup Butter (raw milk butter or organic butter, out of the fridge until is soft) (200g)
  • 3 Eggs
  • 1 Cup 100% Cocoa Powder (200g)

Preparing the Dolce Salame:

  1. Put sugar, butter, eggs and cocoa in a bowl and mix the ingredients until you obtain a nice and creamy mixture.

2.  Add the cookies. Mix again.

3.  Take a parchment paper foil and pour the mix on it.

4. Shape it like a cylinder, think about salami shape.

5.  Put it in the fridge for 4 – 5 hours before serving. Or you can freeze it.

As you can see is veeeeery simple!

Serve it cold!

Another version for who likes sweeter chocolate:

Ingredients:

  • 1 1/2 Cups Dry Cookies or Crackers clumsily chopped (300g)
  • 1 Cup Sugar (200g)
  • 1 Cup Butter cut in squares (raw milk butter or organic butter, out of the fridge until is soft) (150g – 200g)
  • 2 Eggs
  • 1 Package of Semi-Sweet Chocolate 4oz. (113g)
  • 1 Package of 60% Dark Chocolate 4oz. (113g)
  • 2 Tsp of coffee flavored Rum (like Kahlúa) (optional)

Preparation:

The only difference here is that we want to melt the chocolate first in a small pan and let it sit to cool (to make this process faster we could put the pan in the freezer). To do this we use this technique that in Italian is called “Bagnomaria.” When the chocolate is melted add the butter and mix until completely dissolved.

Now we can proceed the same way as the first version:

  1. Put the butter, in a bowl and work it with a fork, to make it look like a cream, then add the sugar and the eggs and mix.
  2. Take the chocolate out from the freezer and pour it into the bowl with the other mixture and mix it.
  3. Add the cookies and mix again.
  4. Take a parchment paper foil and pour the mix on it. Shape it like a cylinder, think about salami shape.
  5. Put it in the fridge for 4 – 5 hours before serve. Or you can freeze it.

You can cover it with powdered sugar, to make it look even more like salami. You can add at the mixture some nuts, like pine nuts, hazelnuts, walnuts, almonds that you like or a mix of them.

Notes
  1. Cover it with powdered sugar, to make it look even more like salami.
  2. Add at the mixture some nuts, like pine nuts, hazelnuts, walnuts, almonds that you like or a mix of them.
